Spanish Rice

1 tbs oil
1 c. basmati rice
1/2 medium onion, chopped
2 cloves garlic, minced
2 c. chicken stock, boiling
1 bunch cilantro, chopped
1 can petite diced tomatoes

Saute onion, garlic and rice in oil. Add broth, tomatoes and cilantro and simmer until rice is tender (approximately 25 minutes).
